Our dough has 4 different herbs and spices. Who does that? The cheese is California Whole MIlk Cheese which we grind at the store for true freshness. The Sauce is made with herbs, spices, evoo and California Tomatoe Sauce. We paint the edge of the crust with EVOO to give it a little kick!

Most of vegetables are cut just before the shift so they are not soft but have a body, like it should be!

We layer this pizza in a certain order. Sauce, mushroom (they cook but stay soft, nothing worst then crispy mushrooms. We add onions and bell peppers under the meat. As the meat cooks they release their flavors to cook the vegtables. The meats are epperoni, salami, beef, Local New York Style sausage, linguica.

This pizza has the gourmet items that make Italian food so special. prosciutto, pancetta, pepperoni, kalamata olives, sicillian green olives, mushrooms, Roma tomatoes, fresh diced garlic and provolone.

It is what it says it is "ALL MEAT". No vegetables! Local New York Sausage, pepperoni, salami, beef, linguica, and ham

We add sliced Meatballs to the topping after we have add the Mozzarella and Provolone. A little pop with our sauteed Onions (cooked in butter, evoo and herbs and spices.)

The devil's Pig. Pepperoni and Sausage (Local) are on the pizza the we add, Sonia's Sweet & Spicy Candied Jalapeno Peppers (Central Valley and Mike & Niki's Hot Honey (from Campbell). The devil made us do it!

Baby Clams, Gilroy garlic, fresh herbs with a dusting of dried herbs and fresh herbs. We drizzle a little evoo. Try it on a thin crust.

Named after our son-in-law (his middle name) San Marzano sauce, anchovies, herbs, lite cheese, onion, and kalamata olives. For the lover of the anchovies and the anchovies are packed in EVOO. Delicious!

A classic but special. All vegetables are cut that day so they are al dente. We layer mushrooms, zucchini, tomato, black olive, artichoke, garlic, bells, and onion

Instead of red sauce we add pesto sauce. It gives the pizza a whole new level of love.

This is Tony's ode to the Salinas Valley. Fresh chooped Jalapeno, Gilroy garlic and 1 topping. Make it a pork topping and thin for a fantastic pizza.

On a red sauce base we add lite mozzarell, Sautéed spinach cooked with oil and garlic & herbs ricotta, and tomato. Again a nice lite pizza and full of flavor.

Classic Pesto (sorry no pine nuts) Pesto, a sprinkling of garlic and roma tomatos. This is the besto pesto!!!

We put a thick cover of our most flavorable Pizza sauce, fresh mozzarella, fresh basil (that we grow in the back of the store, and EVOO

4 layer Lasagna noodles our meat sauce (beef and sausage), ricotta, and mozzarella. Again made one day but not served till the next. Crispy edges are awesome.
